Make-Ahead Meals for Busy Moms Cookbook Review and Giveaway [CLOSED]
I received this GREAT cookbook Make-Ahead Meals For Busy Moms by Jane Doiron, and couldn’t wait to try some of the recipes out! My problem isn’t that I work or don’t have enough time, its that I have an 18 month old (who is a job in and of herself) and a picky husband. I was excited to open up this cookbook and find some recipes that my husband will actually eat.
We tried the Mini Cheesecakes and the Baked Manicotti, both of which we loved! This cookbook has such simple and yummy recipes for the cooking impaired like me.
The writer Jane Doiron also includes tips on things that you can do ahead of time or even the day before. One of the suggestions was to cut all the vegetables and to combine different ingredients them put them in the fridge. I also love that she includes ways on how to freeze and reheat the meal, which is perfect for us because we don’t eat very much so we aren’t wasting any food.

“Freezable Lemon Bars”
1.5 cups graham cracker crumbs 14 oz can sweetened condensed Milk
1/3 cup sugar 1/2 cup fresh lemon juice
5 Tablespoons butter (melted) 12 oz tub of frozen whipped topping (thawed serving)
3 egg Yolks
Preheat the oven to 325 F. In a small mixing bowl, combine the crumbs, sugar and butter. Press this mixture firmly in a 9x9x2-inch ungreased foil pan. In a small mixing bowl, beat the egg yolks, condensed milk and lemon juice for one min. on low speed. Pour over crust evenly. Bake for about 30 mins or until firm. Cool completely before spreading the whipped topping over it. Cover well with plastic wrap, place in a large freezer bag and freeze up to a month. Let stand at room temp. for 30 mins before serving cut into bars.

My favorite thing to make for my husband is Sante Fe Chicken & Rice, and also something my parents called 'Hamburger & Noodles' yummm (elbow mac, hamburger, onions, green peppers & cream of Mushroom soup)

After my third child, I decided that the greatest gift in the world was homemade frozen dinners! My mother-in-law has given me several frozen casserole meals with each child, and I've started giving some to new parents as well. Meals are a great help, and I've had all my children naturally. Just think of those who have cesareans and go home to several other children! What a great cookbook to help moms.
